Bison Smash Burgers with Hangrier Sauce

Ingredients
โ–ข1 lb Ground Buffalo
โ–ข2 tablespoon Sea Salt
โ–ข2 tablespoon Coarse Ground Black Pepper
โ–ข4 Brioche Buns


Hangrier Sauce
โ–ข4 tablespoon Japanese Mayo
โ–ข2 tablespoon Siracha
โ–ข1 tablespoon Spanish Olive Juice
โ–ข1 teaspoon Coarse Ground Black Pepper


Instructions
Sauce

  1. Mix all of the sauce ingredients in a bowl and taste. If you want it less spicy you can add more mayo.

Burgers

  1. Preheat your grill to HIGH.
  2. Separate the bison into 4, ยผlb balls. Roll the balls in your hands until they are nicely formed and compact. Place them in a container and sprinkle with sea salt and black pepper.
  3. Once the flat-top on the grill is smoking hot place one off the balls of the bison on it and smash it with your burger press. You are going for a nice thin patty.
  4. Once the edges begin to brown and look crispy flip the patty by scraping it with a spatula.
  5. Cook for 1 more minute and then take it off the grill.
  6. Place the patty on your bun, add a healthy amount of sauce and enjoy!
