Tortilla Beef Kebabs

Ingredients

- 2 lbs 100% Grass-Fed 85/15 Ground Beef
- 6 Large Flour Tortillas
- 1 Red Bell Pepper (diced)
- 1/4 Red Onion (diced)
- 4 Garlic Cloves (finely chopped)
- 1/4 cup Chopped Parsley
- 2-3 TBSP of BBQ Sweet & Smokey Rub
- Melinda's Thai Sweet Chili Sauce

Preparation

1. In a bowl, combine ground beef, bell pepper, onion, garlic, parsley, and seasoning. Mix until fully incorporated.
2. Trim the edges off the tortillas to make them square.
3. Spread a thin, even layer of the beef mixture across each tortilla.
4. Cut each tortilla into 4. Stack/flip and skewer through the layers, then slice once more.ย 
5. Fire up the grill to medium-high heat. Sear each side until the beef is cooked through and the tortillas are crispy.
6. Brush on that Thai Sweet Chili Sauce during the final minutes for that sticky, sweet heat finish
