I use a Smoke box
"I use a Smoke box with most of my grilling. Sometimes with wet or dry chips. Depending on the item being grilled. This is my Third one. They just rust out from constant use, filling with wet chips then heating and cooling with ash in it, they wear out. But the added Flavors you can get with the right blend of chips is Awesome and worth the time and cost."

Little box adds big flavor to meat being grilled!
"This is such a simple thing that adds nice flavor to meat being grilled. I’m new to any “smoking” techniques but this was such an easy and simple thing to do. I added some apple wood chips to the box, set it in front of my drip pan (was making rotisserie chicken) and the grill did the rest."
