Preparation
1. Preheat your grill to 400° F.
2. Season the chicken thighs with Monument Grills Texas Chicken Rub.
3. Place the chicken directly on the grill grates and cook for approximately 7 minutes. Flip and cook for an additional 7 minutes until IT reaches 165° F. Remove the chicken, allow it to rest, and then dice into small pieces.
4. In a large bowl, mix the diced chicken, chopped bacon, ranch dressing, and shredded cheese.
5. Slice the Hawaiian rolls down the middle and remove the top half.
6. Spread the chicken mixture over the bottom half of the rolls. Top with red onions, sliced peppers, and sliced cheese. Return the top half of the rolls back on top.
7. Place the sliders on the grill and cook for 15 minutes, or until the cheese has melted.
8. Remove from the grill and serve immediately.
