Tri-Tip Carne Asada | World on the Grill

Tri-Tip Carne Asada

Ingredients

• Tri-tip, skirt steak, flank steak, or flap steak
• 1 bunch cilantro, finely chopped
• Zest & juice of 1 lime
• ¼ cup soy sauce
• ½ cup avocado oil
• 1 tablespoon brown sugar
• 1 tablespoon cumin
• 1 teaspoon chili powder
• 1 teaspoon garlic powder
• ½ teaspoon black pepper
• ½ teaspoon salt

Instructions

1. Prepare Marinade
Finely chop cilantro.
Combine all marinade ingredients in a bowl and mix thoroughly.

2. Marinate Steak
Place steak in a zip-top bag or vacuum bag.
Pour marinade over steak and remove excess air.
Marinate:
• Minimum: 4 hours
• Ideal: Overnight

3. Prepare for Grilling
Remove steak from refrigerator 30 minutes before cooking.
Pat steak lightly dry (helps with searing).

4. Preheat Grill (Mesa II 415BZ Setup)
Preheat grill on high heat for 10–15 minutes.
Burner setup:
• Sear burners: HIGH
• Outer burners: LOW
You want aggressive direct heat with a safety zone.

5. Sear the Steak
Place steak directly over sear burners.
Cook using a controlled flip method:
• Flip every 60–90 seconds
Continue cooking until internal temperature reaches:
• 125°F → Medium Rare
• 135°F → Medium

6. Rest
Remove steak and rest 10–20 minutes.
(Resting is critical for tri-tip especially.)

7. Slice Properly
Slice against the grain.
For tri-tip: Remember the grain changes direction — adjust your slicing angle mid-cut.
