Grilled Fish Tacos with Pineapple Salsa in 30 Minutesย

Ingredients
- 2 Tilapia Filets (or other white fish)
- 2 Tbsp of Olive Oil
- Monument Grills Texas Beef Rub
Pineapple Salsa Ingredients
- 1 Cup of Diced Pineappleย
- ยผ Red Onion (diced)
- ยผ Cup Chopped Cilantroย
Preparation:
1. Preheatย Monument Grills 35633ย with all burners on High.
2. OPTIONAL: Grill slices of fresh pineapple for 2 minutes on each side.
3. Coat the fish filets with olive oil.
4. Season both sides of the fish liberally with Monument Grills Texas Beef Rub. Set aside to prepare salsa.
5. Combine pineapple, red onion, and cilantro in a medium-sized bowl.
6. Place the fish filets directly on the grill grates and cook for 3 minutes on each side.ย
7. Add corn tortillas to the grill and heat for 1-2 minutes on each side depending on desired crispness.
8. Remove from the grill and allow to rest.
9. Break or chop the fish into small pieces.
10. Assemble tacos with fish, salsa, and desired sauces.
