Instructions
1. Prep the Chicken
Place each chicken breast between two sheets of parchment paper or plastic wrap. Gently pound to an even ½-inch thickness. This helps the chicken cook evenly and stay juicy.
2. Marinate
In a large zip-top bag, combine lemon juice, olive oil, oregano (or parsley), seasoning salt, black pepper, and onion powder.
Add the chicken, remove excess air, seal, and gently massage to coat.
Marinate for at least 30 minutes, or up to 12 hours in the refrigerator.
3. Preheat the Grill
Preheat your Monument Grill to medium-high heat. Lightly oil the grates to prevent sticking.
4. Grill
Place chicken smooth-side down on the grill.
Grill, covered, for about 5 minutes per side, until juices run clear and the internal temperature reaches 165°F (74°C).
Tip: Monument’s even heat distribution helps you get those clean grill marks without flare-ups.
5. Rest & Serve
Transfer chicken to a cutting board and tent loosely with foil. Let rest for 5 minutes.
Serve with fresh lemon wedges and your favorite sides.
