Perfect Grilled Lobster Tails on a Gas Grill

Grilled lobster tails are one of those dishes that feel luxurious but are surprisingly easy to make—especially when you're cooking on a Monument Grills gas grill. With precise temperature control and even heat distribution, you can achieve tender, juicy lobster with a lightly charred finish in just minutes.

This recipe focuses on clean flavors and proper grilling technique, making it ideal for weekend cookouts, special occasions, or anytime you want to elevate your backyard grilling game.

Marinade & Seasoning Ideas for Grilled Lobster Tails

One of the best things about grilling lobster is how versatile it is. Try these flavor variations on your Monument Grills gas grill:

Classic

Brush with olive oil and season lightly with fine sea salt and freshly cracked black pepper.

Barbecue

Use your favorite BBQ seasoning. Sweet-heat blends or Texas-style SPG (salt, pepper, garlic) add flavor without overpowering the lobster.

Chipotle

Add chipotle powder to your seasoning mix or minced chipotle in adobo to melted butter for a smoky kick.

Garlic Butter

A timeless option. Melt butter with minced garlic and fresh parsley, and baste before and during grilling.

Herb Compound Butter

Mix softened butter with garlic, lemon zest, and herbs like parsley, chives, dill, tarragon, or chervil.
Place it under the meat for split tails or use it for basting.

Pesto

Brush lobster meat with your favorite homemade or store-bought pesto just before grilling for an herby, restaurant-quality finish.

Tips for Marinades & Seasonings

  • Avoid marinating lobster in acidic mixtures for long periods—the acid can begin to "cook" the meat and affect texture.
  • If using salted butter, reduce added salt elsewhere in the recipe.
  • Reserve a portion of any butter used for basting if you plan to serve it alongside the lobster to prevent cross-contamination.

Ingredients

1 tablespoon lemon juice
½ cup olive oil
1 teaspoon salt
1 teaspoon paprika
⅛ teaspoon white pepper
⅛ teaspoon garlic powder
2 rock lobster tails (about 10 oz each)

Instructions

1. Preheat the Grill
Preheat your Monument Grills gas grill to high heat (400–450°F).
Clean the grates thoroughly and lightly oil them to prevent sticking.

2. Make the Marinade
In a small bowl, add the lemon juice and slowly whisk in the olive oil until emulsified.
Whisk in the salt, paprika, white pepper, and garlic powder until well combined.

3. Prepare the Lobster Tails
Using a sharp knife, split the lobster tails lengthwise.
Brush the exposed meat generously with the marinade.

4. Grill the Lobster
Place the lobster tails flesh-side down on the preheated grill.
Grill for about 4–5 minutes per side, turning once and basting frequently with the marinade.
Pro Tip: Monument Grills’ multi-zone heat control makes it easy to move the lobster to a lower heat area if flare-ups occur while basting.

5. Serve
The lobster is done when the meat is opaque, firm, and slightly springy to the touch.
Discard any remaining marinade and serve immediately.
