Chorizo Stuffed Bread Loaf

Preparation

  1. Preheat your Mesa 305 to 500°F.
  2. Slice the bread loaf in half lengthwise. Scoop out the inside of the bread.
  3. Stuff each half of the bread with chorizo.
  4. Place the bread loaf directly on the grill grates, meat side down.
  5. Cook for approximately 10 minutes, until IT reaches 165°F.
  6. Flip the bread loaf halves over and move to the warming rack.
  7. Top with shredded Oaxaca cheese.
  8. Close the lid and continue cooking until the cheese is melted.
  9. Remove from the grill and top with cilantro, onions, and hot sauce.
  10. Slice and serve immediately.
