Instructions
1. Prepare the Herb Crust
In a shallow dish, mix breadcrumbs, parsley, thyme, salt, and pepper.
Dip each pork chop into the beaten egg, then press firmly into the breadcrumb mixture until evenly coated on both sides.
2. Sear Over Medium Heat
Place a cast-iron skillet on the preheated grill and add a thin layer of olive oil.
Once the oil is shimmering, add the pork chops and cook over medium heat (375โ400ยฐF) for 4โ5 minutes per side, until the crust is golden brown.
Avoid moving the chops too early โ letting them sit helps develop an even crust.
3. Check Internal Temperature
Insert an instant-read thermometer into the thickest part of the chop.
At 135โ140ยฐF, move pork chops to a slightly cooler zone or remove from heat.
Tent loosely and rest for 5 minutes.
Temperature will rise naturally to 145ยฐF, keeping the meat juicy.
4. Make the Apple Compote
While the pork rests, place a small saucepan or grill-safe pan over medium heat (350ยฐF).
Combine apples, water, brown sugar, and cinnamon. Cook for 8โ10 minutes, stirring occasionally, until apples are soft and the mixture thickens.
5. Serve
Serve pork chops hot, topped with warm apple compote. Finish with cracked black pepper or a few fresh thyme leaves.
