Preparation

  • Preheat Monument Stainless 4-Burner Infrared Grill--24367 to 300° F for indirect cooking. 
  • Trim around the bones of the pork to expose the bones. Remove any thick pieces of fat or silverskin.
  • Rub yellow mustard all over the pork to create a binder.
  • Season all sides of the pork with Monument Grills Texas Pork Rub.
  • Place the pork directly on the grill grate away from the heat.
  • Once the IT of the pork reaches 130° F brush with Monument Grills Texas Sweet BBQ Sauce
  • Continue cooking until the IT of the pork reaches 140° F.
  • Increase all burners to high and sear all sides of the pork to IT of 145° F.
  • Remove the pork from the grill and tent with foil. Allow to rest for 30 minutes.
  •  Slice, serve, and enjoy.
