4 Ingredient Rack of Pork
Ingredients
- 1 Rack of Pork
- ¼ Cup Yellow Mustard
- ¼ Cup Monument Grills Texas Sweet BBQ Sauce
- Monument Grills Texas Pork Rub
Preparation
- Preheat Monument Stainless 4-Burner Infrared Grill--24367 to 300° F for indirect cooking.
- Trim around the bones of the pork to expose the bones. Remove any thick pieces of fat or silverskin.
- Rub yellow mustard all over the pork to create a binder.
- Season all sides of the pork with Monument Grills Texas Pork Rub.
- Place the pork directly on the grill grate away from the heat.
- Once the IT of the pork reaches 130° F brush with Monument Grills Texas Sweet BBQ Sauce.
- Continue cooking until the IT of the pork reaches 140° F.
- Increase all burners to high and sear all sides of the pork to IT of 145° F.
- Remove the pork from the grill and tent with foil. Allow to rest for 30 minutes.
- Slice, serve, and enjoy.
