4 Ingredient Rack of Pork



  • Preheat Monument Stainless 4-Burner Infrared Grill--24367 to 300° F for indirect cooking. 
  • Trim around the bones of the pork to expose the bones. Remove any thick pieces of fat or silverskin.
  • Rub yellow mustard all over the pork to create a binder.
  • Season all sides of the pork with Monument Grills Texas Pork Rub.
  • Place the pork directly on the grill grate away from the heat.
  • Once the IT of the pork reaches 130° F brush with Monument Grills Texas Sweet BBQ Sauce
  • Continue cooking until the IT of the pork reaches 140° F.
  • Increase all burners to high and sear all sides of the pork to IT of 145° F.
  • Remove the pork from the grill and tent with foil. Allow to rest for 30 minutes.
  •  Slice, serve, and enjoy.

I cooked a 4.24 lb. Prime rib on the grill on Christmas Eve and it was spectacular! Dry rubbed it with salt & pepper, let it sit uncovered in the fridge for a day then let it sit out for about an hour to warm up a little. Heated my Monument grill to 275 and placed the roast on a rack in a shallow roasting pan and placed it in the grill (indirect heat) for about 2 1/2 hours until the internal temperature was 130. Took it off the grill and let it sit covered with foil for about 20 minutes. The IT rose to 136 which is just how we like it and it was the best prime rib I’ve ever cooked. There was no need to reverse sear it because cooking it on the grill did that to perfection. Thank you Monument!
