Rack of Lamb

 Ready in 40 minutes  Serves 4 people

Ingredients

Preparation

  1. Preheat your Mesa 415BZ to at least 500° F. (Just need 5 minutes)
  2. Rub dijon mustard all over the lamb to create a binder.
  3. Season all sides of the lamb with Monument Grills Texas Pork Rub.
  4. Start up the Mesa Broil Zone on High.
  5. Place the lamb directly on the grill grate over the Broil Zone.
  6. Sear for approximately 5 minutes on each side.
  7. Once the desired crust is established, turn off the Broil Zone, reduce the grill temp to 300° F.
  8. Continue cooking until the IT of the pork reaches 120° F.
  9. Remove the lamb from the grill and allow it to rest for 15 minutes.
  10. Slice, serve with pesto sauce (optional), and enjoy.
