Ingredients
- 1 Rack of Lamb
- ¼ Cup Dijon Mustard
- ½ Cup Pesto Sauce for Dipping (optional)
- Monument Grills Texas Pork Rub
Preparation
- Preheat your Mesa 415BZ to at least 500° F. (Just need 5 minutes)
- Rub dijon mustard all over the lamb to create a binder.
- Season all sides of the lamb with Monument Grills Texas Pork Rub.
- Start up the Mesa Broil Zone on High.
- Place the lamb directly on the grill grate over the Broil Zone.
- Sear for approximately 5 minutes on each side.
- Once the desired crust is established, turn off the Broil Zone, reduce the grill temp to 300° F.
- Continue cooking until the IT of the pork reaches 120° F.
- Remove the lamb from the grill and allow it to rest for 15 minutes.
- Slice, serve with pesto sauce (optional), and enjoy.
