Pesto-Mozzarella Stuffed Chicken Breasts
What’s not to love? Chicken, tomatoes, pesto, and a crispy cheese crust? This is an awesome chicken breast recipe!

The ingredients you will need
- 4 Boneless Skinless Chicken Breast
- 1 16 oz Jar of Pesto Sauce
- 2 Tomatoes (sliced)
- 16 oz Fresh Mozzarella (sliced)
- Monument Grills Texas Chicken Rub to Taste
How to make it:
1. Preheat your Denali 405 to 400°F with an indirect cooking section.
2. Create a pocket in each chicken breast by slicing down the middle as if you are going to butterfly cut.
3. Open the pocket and spread pesto sauce, then layer tomato slices, and finally mozzarella.
4. Fold the chicken back over and use toothpicks to hold the chicken closed.
5. Season both sides of the chicken breasts with Monument Grills Texas Chicken Rub.
6. Add the chicken breasts to the grill on the side with indirect heat.
7. Cook on indirect heat until chicken is at 150°F IT.
8. Add additional pesto sauce on top of the chicken breasts and move to direct heat.
9. Continue cooking until 165°F IT and the desired char is reached.
10. Remove from the grill and allow to rest.
