Pretzel Crusted Pork Medallions
Ingredients
- 1 Pork Tenderloin
- 2 Cups of Pretzels
- 2 Eggs
- ¼ Cup of Honey Mustard
- Monument Grills Texas Pork Rub to Taste
Preparation
- Preheat your Monument Grills 24367 to 400° F.
- Place the pretzels in a sealed bag. Crush the pretzels into crumbs using a mallet or rolling pin. Pour into a medium bowl and set aside.
- In a medium bowl, whisk 2 eggs, Monument Grills Texas Pork Rub, and honey mustard. Set aside.
- Remove the pork tenderloin from the package and trim any excess fat or silverskin. Slice the pork into eight medallions of equal thickness.
- Dredge each medallion in the egg mixture and then roll in the pretzel crumbs, being sure to coat all sides.
- Place the pork medallions directly on the grill grates.
- Cook for 5-7 minutes until the pretzels start to brown. Flip and continue cooking the other side.
- Once the pork medallions reach 145° F IT, remove them from the grill and allow them to rest.
- Serve with additional honey mustard.
