Pretzel Crusted Pork Medallions

Pretzel Crusted Pork Medallions

  1. Preheat your Monument Grills 24367 to 400° F.
  2. Place the pretzels in a sealed bag. Crush the pretzels into crumbs using a mallet or rolling pin. Pour into a medium bowl and set aside.
  3. In a medium bowl, whisk 2 eggs, Monument Grills Texas Pork Rub, and honey mustard. Set aside.
  4. Remove the pork tenderloin from the package and trim any excess fat or silverskin. Slice the pork into eight medallions of equal thickness.
  5.  Dredge each medallion in the egg mixture and then roll in the pretzel crumbs, being sure to coat all sides.
  6. Place the pork medallions directly on the grill grates.
  7. Cook for 5-7 minutes until the pretzels start to brown. Flip and continue cooking the other side.
  8. Once the pork medallions reach 145° F IT, remove them from the grill and allow them to rest.
  9. Serve with additional honey mustard.
