Preparation
1. Preheat your grill to 500°F, setup for indirect cooking.
2. Lay slices of bacon on a cutting board with a slight overlap. Place the chicken breast on the bacon and fold each piece of bacon around the chicken. Secure with toothpicks.
3. Insert temperature probes into the chicken.
4. Place the chicken directly on the grill grates in the indirect cooking section.
5. Connect the temperature probes to the Monument Grills app and set the default chicken cook setting.
6. Cook until chicken reaches 165°F and bacon has reached the desired crispiness.
7. Remove from the grill, allow to rest, and slice to serve.
