Lamb Blade Chops With Compound Butter

Lamb Chops Ingredients
- 4 Lamb Blade Chops
- Monument Grills Texas Beef Rub to Taste
Compound Butter Ingredients
- ½ Cup of Unsalted Butter (softened)
- 5 Cloves of Garlic (finely chopped)
- 2 Tbs Fresh Parsley (finely chopped)
- 1 Tbs of Monument Grills Texas Beef Rub
Preparation
- In a medium bowl, combine the softened butter, chopped garlic, chopped parsley, and Monument Grills Texas Beef Rub. Mix with a fork until thoroughly mixed.
- Wrap the compound butter in plastic wrap forming a log, and set aside in the freezer for one hour.
- Preheat the sear station on high.
- Season both sides of the blade chops with Monument Grills Texas Beef Rub.
- Place the chops directly on the sear station grates and cook for 3 minutes.
- Flip the chops and sear the other side for 3 minutes.
- Continue flipping until the desired doneness is achieved (145°F is recommended)
- Remove from the sear station, top with slices of compound butter, and allow to rest.
